Cherry Pie with Patisiere Cream


Awesome pie!
Almond dough, aromatic cherries and the most delicate cream! Very tasty!
Lingonberries can be used instead of cherries..
If you use frozen berries, defrost them and drain all the liquid.
From the specified amount of ingredients, 6-8 servings are obtained.
Ingredients
dough:

  • 1 egg
  • 50 g butter
  • 50 g sugar
  • 70 g almonds
  • 2 tsp baking powder
  • 70-100 g flour

cream:

  • 300 ml milk
  • 2 yolks
  • 100 g sugar
  • 20 g flour
  • 2 tsp vanilla sugar

also:

  • 350 g cherries

Preparation

Cooking the dough.
Grind almonds.

Grind butter with sugar.

Add egg.
Mix.

Add almonds.

Mix.

Add baking powder and flour.
Knead the dough.

The mold (I used a mold with a diameter of 29 cm) grease a little with oil.
Put out the dough.
Make bumpers.
Put in an oven preheated to 180 degrees.
Bake for 7-10 minutes (it is necessary for the dough to “grab” a little, do not bake until ready).

Cooking cream.
Grind the yolks with sugar and flour.

Heat milk (it should be hot, but not boiling).

Add hot milk to the yolks.
Mix.

Put the mass on fire.
Cook, with constant stirring, until thickened.

Put cherries on the dough.

Put the cream on the cherry.
Put in an oven preheated to 180 degrees.
Bake for 20-25 minutes.

Cool the pie completely, cut into portions.
