The soup is very aromatic, with a slight sourness.
You may be surprised by the lack of potatoes, but it is inappropriate in kharcho.

Ingredients

  • 500 g beef (fillet or brisket on the bone)
  • 200 g rice
  • 100 g walnuts
  • 150 g tkemali or satsebeli sauce
  • 150 g onions
  • 3-4 cloves of garlic
  • 2 tsp hops-suneli
  • red pepper (1-2 tsp)
  • peppercorns (5-6 pcs)
  • salt
  • greens to taste

Preparation

Cut the meat into small pieces.

Pour 3 liters of water.
Boil for 1.5 hours (remove scale).

Finely chop the onion.

Grind nuts in a blender.
If there is no blender, the nuts can be chopped with a knife.

Fry the onions in vegetable oil.

Pour rice into the finished broth.
Cook for 10 minutes.

Add the onion to the broth.

Add nuts.

Add sauce.

Add hop-suneli, pepper, salt.
Cook for 5-7 minutes.

Add garlic squeezed through the garlic press.
Remove from fire.
Let it brew for 10-20 minutes, covered.

Sprinkle with finely chopped herbs when serving.
